Our rolled rib of beef comes from heritage breed cattle that is pasture-raised here on our rich and varied Suffolk meadows. We dry-hang our beef carcasses for up to eight weeks then carefully butcher them to produce this fantastic roasting joint.
Rolled ribs are cut from the forerib, and are deeply marbled with a nice layer of natural fat which bastes the meat perfectly. This produces a great flavour and a really juicy piece of meat. And because we have removed the bone and rolled it, this is an easy joint to both cook and carve.
